Cotswolds – Signature Single Malt Whisky (70cl, 46%)

Cotswolds Signature is a single malt from the Classics Collection, bottled at 46% in a 70cl bottle. It is made from locally grown, traditionally floor-malted Cotswold barley. Most of its character comes from maturation in STR (shaved, toasted and re-charred) ex-red wine barriques, which bring rich, bold, fruity notes. This is blended with whisky matured in first-fill ex-Bourbon barrels. The nose is honey and butterscotch with peaches, apricots and a hint of marzipan. The palate has tannic malt, oils and dark sugar, with plenty of spice and caramelised Seville orange marmalade. The finish is long and resinous, with dark red fruits and a hint of treacle.
