Daftmill – 2011 Winter Release (70cl, 46%)

A Lowland single malt from Daftmill, taken from the 2011 Winter Release and drawn from the distillery's winter distillation season. It was matured entirely in first-fill ex-bourbon casks and is bottled at 46% in a 70cl bottle. Daftmill was founded in 2005 on a family farm that had long stood outside commercial whisky production. Its style is a clean, cereal-led spirit shaped by gentle oak rather than heavy wood influence. Orchard fruit, vanilla cream and honeyed malt sit at the centre, with a subtle grassy freshness and a soft lift of citrus.
