Dancing Goat Limousin Rye is a 100% rye whiskey from Cambridge, Wisconsin, in a 750ml bottle at 46% ABV. It spent more than six years in once-used bourbon barrels.
The aged rye was then blended and moved into a 16-barrel solera built from French Limousin oak, where it rested for three to six months. It was brought down to bottling strength slowly, in cask.
The nose is perfumed, with incense, sandalwood and soft leather, then caramel, vanilla and dark fruit. The palate is soft, with golden raisins, white flowers, honey and orchard fruit, followed by black pepper and clove. The finish is sweet and balanced, with oak and a quiet floral note.
