This is a 13 year old Irish single malt from Dingle Distillery, released as Limited Edition 2 and chosen by Paddy Foley, Dingle's Head of Maturation.
The whiskey spent 11 years in Bourbon barrels, then a further two years in a Madeira cask. It is bottled at 51.3% ABV, non-chill filtered and with no added colour.
The nose has honey, sun-dried fruit, candied citrus and toffee. The palate is full and silky, with dark chocolate, spiced oak, clove and cinnamon, and the finish moves from nutmeg and warm syrup sweetness to orchard fruits.
