This is a single pot still Irish whiskey from Dingle Distillery in County Kerry, made with locally sourced malted and unmalted barley and mashed in Dingle's wooden mash tuns.
It was matured in Bourbon, Oloroso, Pedro Ximénez sherry and red wine casks, and is bottled at 46.5% ABV and non-chill filtered.
The nose has nutmeg, cinnamon and allspice. On the palate there are cooked dark fruits, brown sugar and spiced stewed apples, and the finish brings pot still spice, toasted oak, soft honey and a lingering note of nutmeg.
