Dolin Blanc is a white vermouth from Chambéry, in France, made under the Chambéry appellation. Dolin launched the Blanc in 1881 as the first clear, sweet vermouth, and the house, founded in 1821, still works from its family recipe.
The base is Ugni Blanc wine, infused with 32 herbs and spices, among them Alpine artemisia and gentian, hibiscus, basil, cinnamon, quina bark, hyssop, chamomile and rose petals. The botanicals steep as whole plants for up to three months, which gives a vermouth lighter, drier and less pungent than many.
On the nose there is spicy bark, menthol, sea salt and a little pine, with mountain flowers. The palate brings white fruit, pear, ripe pineapple and elderflower, ending in a balanced bitter, sweet and acidic finish. It suits drinking over ice with a twist of orange or lemon.
