Don The Isles is a peated Islay single malt, 10.5 years old and bottled at 56.3% ABV in a 35cl bottle.
It was finished for two and a half years in a refill Pedro Ximénez octave, a small cask that had been filled before.
Peat smoke and sea salt meet dried figs and raisins on the nose, with dark chocolate, lemon peel, roasted almonds and hazelnut. The palate is smoky and spicy, with dates, cocoa, toasted oak and black pepper. The finish carries peat smoke, dark chocolate and spicy oak.
