Elijah Craig Barrel Proof is a 12-year-old Kentucky straight bourbon from Heaven Hill Distillery in Bardstown. This is batch C921, the third batch of 2021, released in September of that year. It is bottled at 60.1% ABV (120.2 proof), without chill filtration, in a 70cl bottle. The mashbill is 78% corn, 12% malted barley and 10% rye.
The nose offers baking spices with cinnamon and sweet fruit, with light caramel, honey and oak behind. The palate is creamy, with sweet berry at the front turning to vanilla and oak. The finish is oak and cinnamon with a warming heat, and sweet berry and char.
