Elijah Craig Barrel Proof is a 12 year old Kentucky straight bourbon from Heaven Hill. It matures in new American white oak barrels and is bottled at cask strength, 62.8%, without chill-filtering or added colouring, in a 70cl bottle.
The nose combines apple and cinnamon with caramel and maple syrup. On the palate those sweet, fruity impressions meet a firm oak structure, with a powerful, concentrated body. The finish is long, with dry wood spice and dark chocolate.
