Epilogue is a 19-year-old Barbados rum and the final release in Foursquare's Exceptional Cask Selection series, marked XXXI. It is a blend of pot- and column-still rums, fully matured at the distillery in ex-bourbon American oak casks and bottled at 57% abv in a run of 1,300 bottles.
The rum has no added sugar or colouring and is not chill filtered.
On the nose there is caramelised orange and citrus peel, toffee and butterscotch, with ripe tropical fruit, leather and a touch of tobacco. The palate is rich and concentrated, with dark chocolate, roasted nuts, vanilla, baked pineapple and warming oak spice. The finish is long and oily, with cocoa, citrus oils, polished oak and lingering spice.
