George Dickel 8 Year Old is a Tennessee whiskey made at the Cascade Hollow Distillery in Tullahoma, bottled at 90 proof (45% ABV). It is aged for at least eight years in new, charred American oak barrels.
The mash bill is 84% corn, 8% rye and 8% malted barley. Before filtering through sugar maple charcoal, the whiskey is chilled to about 40 degrees Fahrenheit, a variation on the Lincoln County Process.
The nose has sweet vanilla, cherry, orange, almond toffee and oak. On the palate come caramel, toasted coconut, banana, butterscotch and waffle cone, with a light oak influence. The finish is medium, sweet at first, then turns to oak, pepper and drying spice.
