Heavensake Orange Label is a Junmai Daiginjo sake made with the Urakasumi brewery of Shiogama, founded in 1724. It comes from the Heavensake project, begun in 2016 by French cellar master Régis Camus, who applies the Champagne practice of assemblage to sake by layering several Urakasumi expressions. The rice is polished to 40-45%. The style is rich and dry, with an undercurrent of umami, smooth acidity and a silky texture. It is poured chilled in a wine glass. The nose is fruity, with pineapple, lychee, green apple, melon, blossom and white lily, over dried fruit, steamed rice and a little creamy vanilla. Pineapple and lychee carry across the palate with floral notes, and the finish is refined, with dried fruit lingering.
