This is a junmai ginjo sake made by French cellar master Régis Camus in collaboration with Urakasumi, a Japanese brewery founded in 1724.
The nose is light and a little unusual, with lemon peel and crème brûlée. The palate is gentle, with an almost butterscotch character and lively notes of raisin. It suits raw fish dishes and ceviche.
