Hidalgo Especial Fino La Panesa is a Fino sherry from Bodegas Hidalgo La Gitana in Sanlúcar de Barrameda, a house dating back to 1792. It is made from Palomino and passes through Hidalgo's solera system. The wine ages biologically under a thick layer of flor yeast, an extended maturation that gives a dry, crisp and savoury style. It falls under the Jerez-Xerès-Sherry DO and comes in a 75cl bottle.
