High West Cask Collection Barbados Rum Barrel is a blended bourbon in a 75cl bottle, bottled at 100 proof. It is made from straight bourbons aged between 4 and 9 years.
The blend is finished for 10 months in second-use Barbados rum barrels, which add a Caribbean sweetness to the bourbon.
The palate brings vanilla, caramel and oak alongside molasses, toasted coconut and ripe fruit. Honey and a hint of tropical fruit sit over toasted oak, and the finish is spiced, with cinnamon, dark chocolate and a prickle of pepper.
