Highland Park 21 Year Old 1999 - The Octave (Duncan Taylor)

A single cask Highland Park from Orkney, bottled by Duncan Taylor in its Octave range. The whisky was distilled in 1999 and matured for 21 years, partly in a small octave cask, before bottling in 2021. The outturn was 67 bottles. Octave casks are small, which increases contact between spirit and oak. On the palate this one shows spicy heather honey and dried fruit, followed by a finish of leather and gentle smoke.
