Highland Park 30 Year Old Spring 2019 Release is a single malt from Orkney, bottled at 45.2%. It was made from fewer than 20 casks filled in 1989 and earlier.
Three kinds of cask went into the vatting: first-fill ex-bourbon, first-fill sherry-matured European oak and a number of refill casks.
The nose has sweet vanilla and floral honey with dark chocolate, orange peel and a hint of peat smoke. The palate offers soft caramel and dark chocolate, warm spices and a touch of sharp citrus. The finish is long and dry, with aromatic peat and a salty sea breeze.
