Highland Park – Cask Strength No 3 (64.1%)

Highland Park Cask Strength No 3 is the third release in the Orkney distillery's cask strength series. It is bottled straight from the cask at 64.1%, with no water added. It combines first-fill sherry-seasoned American and European oak casks with a smaller share of refill casks. Master Whisky Maker Gordon Motion used a higher proportion of Orkney-peated malt for a smoky character. The nose offers smouldering peat, lightly charred oak, honey-glazed lemons and crushed aniseed. The palate brings ripe mango, heather honey, whipped vanilla custard and a hint of violet. The finish is long, with pink grapefruit peel, sponge cake and heather peat smoke.
