Highland Park – Quercus Keystone Series Release Part Three (48.3%)

Highland Park Quercus is the third release in the Keystone Series, a five-part collection built around the elements behind the distillery's character. It was released in 2017 and is named after the Quercus species of European oak. The whisky matured only in first-fill European oak casks seasoned with Oloroso sherry. The casks were seasoned in Jerez for around two years before being sent to Orkney to be filled. Bottled at 48.3% ABV, it has a natural dark golden colour and an outturn of 1,200 bottles. Fruitcake, dried fruits, warming spice and dark chocolate are described, alongside the distillery's aromatic peat smoke.
