Hillrock Double Cask Sauternes Finished Rye Whiskey (75cl, 45%)

This is a rye whiskey from Hillrock Estate Distillery in Ancram, in New York's Hudson Valley. The distillery grows grain on its own estate and malts on site. Hillrock finishes its Double Cask Rye in Sauternes casks, which previously held the sweet Bordeaux dessert wine. The finish adds honeyed sweetness and dried-fruit character to the spicy rye base. It is bottled at 45% ABV. The nose offers honey, apricot and dried fruit over rye spice. On the palate, spicy rye is softened by honeyed sweetness and oak. The finish is long, with sweet fruit and lingering spice.
