Hillrock Estate Distillery – Solera Aged Bourbon Sauternes Cask Finish (75cl)

This is a bourbon from Hillrock Estate Distillery in New York's Hudson Valley, aged in a solera and in oloroso sherry casks, then finished in French Premier Cru Sauternes casks. In a solera, a little whiskey is drawn from the lowest tier of a pyramid of barrels and replaced with new whiskey in the top barrels. The distillery grows all its grain on its own farm and processes the malt in its own malthouse. Honey amber in colour, it has a nose of caramel, vanilla bean, nuts and oak, with orange blossom, Meyer lemon zest and honey. The palate brings honey-coated roasted nuts, cinnamon, toffee and vanilla, with honeydew melon, citrus and apricot, leading to a long, clean finish of vanilla and floral oak with honey.
