Hillrock Estate Distillery – Solera Aged Bourbon (75cl)

Hillrock Solera Aged Bourbon comes from a New York distillery that grows all of its grain on its own farm and processes the malt in its own malthouse. It is described as the first American whiskey aged by the solera method. In a solera, a small portion is drawn from the lowest tier of barrels and replaced with newer whiskey in the top barrels, so no barrel is ever emptied. This bourbon is finished in 20 year old Oloroso sherry casks. Cinnamon, oaked caramel and vanilla lead on the nose, with maple syrup, brown sugar, toffee and raisin on the palate, and a warm finish of caramel and butterscotch with walnut and fig.
