Hillrock Estate Distillery – Solera Aged Bourbon 'Dakota Shy' Napa Cabernet/Sherry Cask (75cl)

Hillrock Estate 'Dakota Shy' is a solera aged bourbon from New York, in a 75cl bottle. It was aged in Solera and Napa Cabernet casks, then finished in Spanish sherry casks. Hillrock grows all the grain for its whiskeys on its own farm and processes the malt in its own malthouse. It describes itself as the first distillery to do both since before Prohibition. The nose brings caramel and vanilla with cherry, blackberry, citrus and sweet notes of taffy and plum. The palate is warm and sweet, with vanilla, toffee and French oak, and the finish is long, with vanilla, cherry and cabernet.
