Hillrock Estate Pedro Ximenez Cask Solera Aged Bourbon is a New York bourbon in a 75cl bottle. The distillery grows all its own grain and processes the malt in its own malthouse. The bourbon is aged by the solera method in a series of barrels that include American oak and sherry casks, blending bourbons of various ages. It is finished in 20-year-old Pedro Ximenez sherry casks, which add floral notes layered with fig, roasted walnuts, candied fruit and spicy rye. The tasting notes are caramel, toffee, vanilla and spice, with a smooth, complex finish.
