Hillrock Estate Double Cask Rye is a rye whiskey from Hillrock Estate Distillery in New York's Hudson Valley, finished in French Premier Cru Sauternes casks. It is bottled at 45% ABV in a 75cl bottle.
The rye is grown on the estate, then mashed, fermented and pot distilled on site. It matures first in new #3 char American oak, then in a second new barrel with a #4 char, before the Sauternes finish.
The nose has candied orange peel, honeycomb, peach skin, vanilla and rye spice. Toasted bread with honey and butter, cashews and citrus come through on the palate, and the finish is long and honeyed, with apricot.
