Hillrock Solera-Aged Bourbon with a 1er Cru Sauternes finish is a bourbon from the Hudson Valley, bottled at 46.3% ABV. It is a limited edition.
The bourbon is aged by the solera method, in which small portions are drawn from a pyramid of barrels and refreshed over time. It matures in Oloroso sherry and solera casks, then is finished in Premier Cru Sauternes wine casks.
The nose offers honey, caramel, vanilla bean and toasted oak, with orange blossom and Meyer lemon zest. The palate is creamy, with honey-coated roasted nuts, cinnamon, toffee, honeydew melon, citrus and apricot. The finish is long, clean and floral, with vanilla, oak and honey.
