Hillrock Solera Aged Bourbon Whiskey is a 60% ABV bourbon from Hillrock Estate Distillery in New York's Hudson Valley, in a 75cl bottle. It is described as America's first solera-aged bourbon: barrels are drawn down and refilled rather than emptied, so older whiskey keeps mingling with younger.
The bourbon was matured in American oak and 20-year-old Oloroso sherry casks, then finished in Barbados rum casks. The distillery grows its own grain on site.
On the nose there is tropical coconut, vanilla bean, brown sugar and cinnamon. The palate brings caramel, creamy vanilla, taffy and tropical fruit, and the finish is long and warming, with toasted coconut, clove and lingering rum sweetness.
