Hillrock Solera Aged Bourbon Whiskey PX Cask Finish (75cl, 46.3%)

Hillrock Solera Aged Bourbon with a Pedro Ximénez cask finish is an American bourbon bottled at 46.3% ABV in a 750ml bottle. The base is solera-aged: whiskey is periodically drawn from lower casks in a pyramid of barrels while new spirit is added at the top, so older and younger whiskeys blend gradually over time. It is then finished in Pedro Ximénez sherry casks that are 20 years old. Hillrock Estate Distillery grows its own grain on the estate. The finish is described as bringing floral notes, fig, roasted walnuts, candied fruit and spicy rye, alongside dried fruit, dark chocolate and honeyed sweetness over a vanilla and caramel bourbon backbone.
