Hillrock Solera Aged Bourbon is made at Hillrock Estate Distillery, a farm distillery in New York's Hudson Valley, and is bottled at 46.3% ABV. Hillrock began producing solera-aged bourbon in October 2012. The average age of the solera bourbon is currently over six years, and the mash bill contains around 37% rye.
The whiskey is blended from Hillrock Estate Bourbon and mature seed bourbon, rested in 20-year-old Oloroso sherry casks, then finished in Shea Vineyard Willamette Valley Pinot Noir casks.
The nose shows ripe cherries, blackberries, plums, crème brûlée and caramel. The palate brings warm vanilla, cherries, toffee and French oak, and the finish carries cinnamon, clove and nutmeg.
