Hillrock Solera Aged Dakota Shy Napa Cabernet Cask Finish Bourbon (75cl, 46.3%)

Hillrock Solera Aged Bourbon is made at Hillrock Estate Distillery in Ancram, in New York's Hudson Valley, and bottled at 46.3% ABV in a 75cl bottle. The distillery grows its grain on its own estate and malts on site. The bourbon is aged by the solera method, a fractional system uncommon in American whiskey. It is then finished in Napa Valley Cabernet Sauvignon casks from the Dakota Shy winery, which bring red-wine tannin and dark fruit. The nose is black cherry and cassis over caramel and oak. The palate is rich and structured, with dark fruit, tannin, vanilla and baking spice, and the finish is long and dry, with fruit and oak.
