Holyrood – Ambir (70cl, 49.8%)

Ambir is a single malt from Holyrood Distillery in Edinburgh, bottled at 49.8% ABV in a 70cl bottle. The distillery draws on the city's brewing heritage and builds flavour from malt and yeast varieties, much as brewers do. Seven sweet malts and ten fruity yeasts form its base. The name is the Scots word for amber. It was matured in bourbon casks with a smaller share of sherry casks. Caramel, fudge, red fruits and vanilla are the flavours most often associated with it.
