Ambir is a single malt from Holyrood Distillery in Edinburgh, bottled in 2025 at 49.8% ABV in a 70cl bottle. Its name is the Scots word for amber.
The spirit is built on seven sweet specialty malts and ten fruity yeasts. It matured mostly in first fill bourbon barrels, with a smaller share in Oloroso sherry casks. It is non-chill-filtered and has no added colouring.
The nose offers caramel, creamy fudge, demerara sugar and Scottish tablet. On the palate come red fruits, vanilla and cornflakes. The finish is velvety, with biscuity notes and a faint savoury hint at the end.
