Holyrood – Ambir

Holyrood Ambir is a Lowland single malt made from Golden Promise barley, mixed with the roasted specialty malts Crystal 240 and Caramalt. Fermentation runs for an unusually long 118 hours, and the spirit is distilled twice in copper pot stills. It matures in first fill bourbon and Oloroso sherry casks. The nose is warm caramel and vanilla with the soft sweetness of raw sugar. On the palate come ripe raspberries and dark cherries alongside gentle vanilla, and the long finish carries the taste of freshly baked sponge.
