Holyrood – Noir Bordeaux Yeast (70cl, 47.1%)

Holyrood Noir Bordeaux Yeast is a Lowland single malt from Holyrood Distillery, one of three bottlings in the Noir series. It combines East Lothian pot still malt with Pinnacle M and the Bordeaux wine yeast BP725. The whisky was matured in ex-bourbon casks and Bordeaux barriques, then bottled in 2025 at 47.1% in a 70cl bottle, non-chill-filtered and without added colouring. Holyrood began production in central Edinburgh in 2019 and works with different malts and yeasts to build flavour during fermentation. The nose offers strawberry, blackcurrant and cherry with fruit bars and cheesecake. The palate brings Scottish tablet, fudge and doughnuts alongside breakfast cereal. The finish is silky and warm, long and dry.
