Holyrood – Pitch (70cl, 49.4%)

Pitch is a single malt from Holyrood Distillery in Edinburgh, bottled at 49.4% in a 70cl bottle. It is made from Scottish pot still malt and brown malt, both usually used for dark porter beers, and fermented with the red wine yeasts Pepe Nero and Toro Nero. The malt brings chocolate and hazelnut aromas, which the yeast reinforces. The chocolatey spirit is then matured in Oloroso casks. The nose offers cocoa, blackcurrant and honey. The palate is sweet and full, with red fruit compote, hazelnuts and spicy green pepper, and the finish brings hints of coffee, raisins and oak spice.
