A single cask Isle of Raasay single malt from 2021, matured in a PX quarter cask, number 21/1231. It is bottled at 60.9% in a 70cl bottle and belongs to the Awakening Series.
Raasay began growing barley on the island again in May 2017, thanks to Bill Dobbie and Alasdair Day, after a gap of more than 40 years.
The distillery ferments for 96 to 110 hours, which keeps the high mineral content of its water, filtered through volcanic sedimentary rock. This long fermentation gives the spirit a berry-fruit character before it goes into the cask.
