Jean-Marc Brocard Chablis is a white Burgundy made entirely from Chardonnay by Domaine Jean-Marc Brocard, a family estate that farms biodynamically. It is bottled at 12.5% ABV in a 75cl bottle.
The village-level wine is fermented in stainless steel with native yeasts at 18 to 20°C, after pneumatic pressing and cold settling, and goes through complete malolactic fermentation. There is no oak influence, which leaves the character of the Kimmeridgian soils to show.
The nose is smoky and flinty, with green plum, yuzu, white blossom and lemon verbena. The palate is lean, with lime, lemon and yellow and green apple. The finish is long and chalky, with wet stone and lemon pith.
