Jean-Marc Brocard Vau de Vey is a Premier Cru Chablis from Burgundy, made entirely from Chardonnay. The Vau de Vey vineyard lies on a very steep, east-facing slope on the left bank of the Serein River. The vines are farmed organically and the wine is fermented and matured in temperature-controlled stainless steel, which keeps the aromatics clear of oak. The Kimmeridgian limestone subsoil shows in its minerality. On the nose are lemon zest and citrus peel, with yellow apple, Mirabelle plum, oyster shell and flint emerging with air. The palate is creamy and curd-like in the middle, with yellow plum and a chalky, stony acidity. The finish is long and fresh, with white pepper and salty mineral notes.
