A wheated Kentucky straight bourbon finished in honey casks, bottled at 53% ABV in a 750ml bottle. It is made at Old Commonwealth Distillery in Lawrenceburg from a mashbill of 64% corn, 24% wheat and 12% malted barley.
Organic honey is placed directly inside new No. 3 char oak barrels, which are rotated by hand daily, before the bourbon goes in for its finishing period.
The nose has wildflowers, orange marmalade and cinnamon icing. The palate is chewy and oily, with cherry cola, honey, molasses, vanilla and honeycomb. The finish moves from char to sweet honey, cinnamon crumb cake and vanilla cream.
