Kilchoman – 100% Islay Sherry Cask 11 Years Old (50%)

This is an 11-year-old Islay single malt from Kilchoman, distilled from barley harvested in 2011, 2012 and 2013. It was matured in ex-oloroso sherry casks and bottled at 50%, with natural colour and without chill-filtration. The bottling brings together 16 individually chosen first-fill oloroso sherry casks, previously used by José y Miguel Martin of Jerez, Spain. On the nose it offers orange peel, dried fruit, light peat smoke and sweet spice. The palate has rich smoke and dark chocolate with honey, cooked apples and malty sweetness. The finish is of grilled fruit, plums and currants, with lingering wood smoke.
