Kilchoman – Genesis Stage 2 (70cl, 46%)

Kilchoman Genesis Stage 2 is an Islay single malt from Kilchoman, a farm distillery built in the buildings of Rockside Farm on the remote west side of the island. It is bottled at 46% in a 70cl bottle. The distillery aims to use as many local ingredients as it can. The barley is dried with a heavy use of peat, at 50 ppm, which makes Kilchoman one of the more heavily peated whiskies. The spirit is reduced to strength with water from the Octofad farm, on the Rhinns of Islay. The first spirit ran from the small stills at the end of 2005.
