Kilchoman Sauternes Cask is an Islay single malt bottled at 46% in a 70cl bottle. Kilchoman is a farm distillery, set up by Anthony Wills in the buildings of Rockside Farm on the west side of the island, and its barley is dried over plenty of peat, at 50ppm.
The Sauternes casks shape the spirit, adding a mix of maritime peat smoke, sweetness and sharp citrus. The whisky is reduced to bottling strength with water from the distillery's own source.
