Knob Creek 21 Year Old is a Kentucky straight bourbon matured for 21 years in new American oak at the Jim Beam Distillery in Clermont, Kentucky. It is a limited edition, bottled at 50% ABV (100 proof) in a 75cl bottle.
Booker Noe created Knob Creek in 1992, returning to the pre-Prohibition approach of higher proof and longer age. This bottling marks the upper limit of the brand's extended maturation programme, with the long time in charred oak bringing aged leather, dark caramel, dried cherry and char.
On the nose it shows toasted oak, vanilla and leather, while the palate adds brown sugar, cherry and black pepper before a long, warming finish.
