Koval Bourbon is an organic, single barrel bourbon from Koval Distillery. Its mash bill is at least 51% corn, with millet in place of the usual rye or wheat. Millet is a gluten-free grain.
The whiskey is aged in a charred new American oak barrel.
The nose is described as mango chutney, while the millet adds a soft note of vanilla. The palate brings apricot custard sweetness. The finish is peppery caramel, fading to clove-spiked tobacco.
