La Diablada is a Peruvian pisco, made by Mélanie da Trindade-Asher in Ica. It takes its name from the Danza de los Diablos, in which angels and devils contest a balance, and the spirit aims for the same balance between softness and dryness.
It is an acholado, a blend of at least two of the eight grape varieties the appellation permits. Here three are used: Italia, Moscatel and Quebranta.
It can be sipped neat or used in cocktails.
