La Diablada is an acholado pisco from Peru, named after the Andean dance of angels and demons. Acholado means a blend of grape varieties, and this one combines non-aromatic Quebranta with aromatic Moscatel, Italia and Torontel.
Only the first pressing is used, and the spirit is distilled once in copper pot stills. Each bottle holds the equivalent of eighteen pounds of grapes.
Quebranta gives body and earthy structure, while Moscatel and Torontel bring floral and citrus notes. It is made to be sipped.
