Royal Oyster is a Loire Valley white from Marc Brédif, made from 100% Melon de Bourgogne under the Muscadet Sèvre-et-Maine AOC. It is chosen to suit oysters and shellfish.
The wine is fermented at low temperatures to keep the grape's delicate aromatics, then matured sur lie on its fine lees in vat until it is bottled the following April. The lees contact adds a subtle creaminess and some weight on the palate.
The nose shows lemon zest, green apple, white flowers and flinty minerality with a faint saline note. The palate is crisp and citrus-led, with a mineral backbone, and the finish is clean, with lemon pith and a saline snap.
