This is a 2021 white Burgundy made from Aligoté by Domaine Marc Colin. The vines grow on limestone-rich soils, which give fresh acidity and a chalky mineral lift. The grapes were hand harvested.
Fermentation is in stainless steel or neutral vessels, keeping the focus on fruit rather than oak.
The nose is fresh and lively, with lemon zest, green apple, white flowers, wet stone and a herbal note of sage or tarragon.
