Mars Shinshu Komagatake 2021

This is a 2021 edition single malt from Mars Shinshu Distillery, part of Hombo Shuzo. It is made in the Kiso Alps, close to the summit of Mt. Komagatake, and matured at altitude in what is known as Shinshu ageing. It was bottled non-chill-filtered, so the texture and natural oils of the spirit are kept intact. The nose is fruity, with quince, apricot and ripe banana over a little vanilla custard. On the palate honey and hazelnuts sit in balance, joined by juicy melon and a restrained note of dry cocoa.
