Mathilde Framboise (75cl, 18%)

Mathilde Framboise is a French raspberry liqueur from Maison Ferrand, in a 75cl bottle. It is made by macerating pressed whole berries in a neutral alcohol base rather than distilling them, with no preservatives, stabilisers or additives. Three raspberry varieties go into it: Lloyd George from Scotland, and Rose de Plombières and Violette de Boux from Burgundy. The nose is raspberry compote with light floral notes. The palate is soft, with raspberry jam and cherry pie richness, balanced by enough acidity to stay fresh. The finish is long and gently warming, with floral and raspberry notes and a hint of vanilla.
